  • 1 . Prepare the ingredients: Peel and finely chop the onion and garlic cloves. Wash and slice the carrots, and cut the potatoes into medium-sized cubes. Choosing fresh ingredients is key to achieving a juicy and flavorful beef stew.Brown the meat: In a large pot, heat a drizzle of olive oil over medium-high heat. Season the beef with salt and pepper and sear it on all sides until browned. This step is essential to lock in the juices and add a deep flavor to the stew. Remove the meat and set it aside.Sauté the vegetables: In the same pot, add more oil if necessary and sauté the onion and garlic until translucent. Add the carrots and cook for a few more minutes. The sautéed vegetables form the flavor base for any homemade stew.Add the tomato and wine: Pour in the crushed tomatoes and cook for 5 minutes. Then, add the red wine and let it reduce for 10 minutes to evaporate the alcohol. This step adds depth and complexity to the flavor of the beef stew.Simmer: Return the beef to the pot, add the broth, and sprinkle in the thyme. Stir well, cover the pot, and cook on low heat for 1.5 hours or until the beef is tender.
